Chris lived in Chicago as a chef in a restraunt. Chris said that the restraunt where he worked at got produce from the gardens started in Cabrini-Green. The restraunt Chris worked for would discuss with gardeners how much and what would be grown, and they would set it up to buy for that season. The staff at the restraunt Chris worked in also took time to work in the gardens. Now Chris lives in Indianapolis, and he owns Goose the Market. Chris's market sells a variety of things from coffee drinks to deli meats. When walking into the Market you get the wonderful smells of food, the sounds of jazz, and an incredibly friendly staff. One thing you will find Chris doing at his Market he said is composting. Chris composts from the Market in the backyard and at his parents house, but he is interested in finding a place to compost somewhere closer. Chris said that the compost he makes can be sold to home gardeners. Chris talked about buying vegetables from local gardeners, but the vegetables would need to be organic and not treated with pesticides and chemicals. Chris buys herbs locally from Trish. He said that two herbs he purchases from Trish are Rosemary and Parsley. Chris would like to model off of the restraunt he worked for in Chicago if/when he buys locally, and that entails having at least one staff member go to the garden that vegetables are purchased from and work in that garden. Chris feels that this will allow the staff to be knowledgable and know where the produce comes from.
